Made from sugar beets, Isomalt is a type of sugar alcohol with the same physical properties as regular sugar, but with half the calories and more stability. Used by many chefs for sugar work that requires fast setting and hold capabilities, isomalt forms part of many garnishes, cases and clear films in restaurants
